CHICKEN MARSALA

Ingredients
1/4 cup flour
salt and pepper
4-4oz chicken breasts, boned, skinless
1/2 cup Marsala wine
1/2 lemon,juiceonly
1/2 cup fat-free chicken stock or broth
1/2 cup slicedmushrooms(anytype)
1 tbsp chopped fresh parsley

Method
1. Mix together pepper, salt, and flour. Coat chicken with seasoned flour.
2. Spray large skillet with non-fat cooking spray; heat over medium-high heat.
3. Place chicken breasts in skillet and cook 8-12 minutes until done, when juices run clear. Remove chicken from skillet once done and set aside covered to keep warm.
4. Add wine to skillet and stir until heated. Add juice, stock, and mushrooms. Stir, reduce heat, and cook for about 10 minutes, until sauce is partially reduced. Add parsley.
5. Pour sauce over chicken and serve immediately

Yield: 4 servings – 4 oz per person
