FRESH WHOLE ASPARAGUS WITH DIP
Ingredients
2 lbs asparagus, woody stems removed
½ cup fat-free mayonnaise
¼ tsp curry powder
2 each fresh cloves garlic, minced
salt and pepper
Method
1. Cut asparagus woody stems and rinse asparagus well. Place asparagus on microwave safe plate. You might have to cook the asparagus in batches.
2. Microwave asparagus until fork tender about 3-6 minutes. Be careful not to overcook.
3. Immediately after removing asparagus from microwave place in large bowl with ice water to stop the cooking process.
4. In separate bowl, combine the fat-free mayonnaise, curry, garlic, salt and pepper.
5. Place asparagus in a fan shape on a large serving plate and place dip in small dish or bowl.
You can serve asparagus chilled or at room temperature.
Yield: 6 servings – about 7 spears with dip per person
