ALL CURRIED UP DIP/SPREAD

Ingredients
1 cup sweet onion, minced
1 tbsp curry powder
2 cups fat-free ricotta cheese
salt and pepper
non-fat cooking spray

Method
1. Spray skillet with non-fat cooking spray and heat over medium heat. Add onions and cook until they become translucent, about 3 minutes. Add the curry powder and cook one minute more. Let cool.
3. Stir curry mixture into the fat-free ricotta cheese. Season with salt and pepper. Chill for at least one hour. (This can be made in advance and stored in the refrigerator for up to 3 days.)

Serve with fresh vegetables and pita wedges.

Yield: 8 servings – ¼ cup per person
